Larks: Hot Fudge Sauce



1 cup sugar

¼ cup cocoa powder, sifted

6 oz (about 1 ½ cups) good quality dark chocolate

¾ cup light corn syrup

1 ½ cups heavy cream

¼ cup butter

2 tsp vanilla extract

¼ tsp salt


Combine all ingredients in a bowl and heat over a double boiler on low heat until sugar dissolves, butter melts, and sauce becomes dark and shiny, about 20 minutes. Cool over an ice bath and store in the fridge in an airtight container for up to 1 week. To reheat, gently heat in the microwave or over a double boiler until hot. Hot fudge can be kept hot over a double boiler or in a dip warmer for serving.
