GRANTS PASS, Ore. -- Casablanca Coffee and Grill makes fresh fast food using all organic produce, meat and materials.
February 20 marks the sixth year Casablanca has been serving in Grants Pass and to show it's appreciation, they will serve free coffee until 11 a.m. and $1 tacos all day.
The grill prides itself on all of it's food for being fresh to order and the tacos are one of the crowd favorites.
"We use only the freshest ingredients that goes into all our food. Our tacos are probably like any other that you have tasted, because of our sauce we put into the meat," said General Manager, Andy Baida.
Here are the ingredients for Casablanca tacos:
2-5lbs ground beef
1 bell pepper
4-6 green tomatillos
1/2 cup cilantro (small hand full)
4-8 whole garlic cloves
5 Roma tomatoes or 2-3 large slicer tomatoes
4oz chipotle peppers in adobo sauce (or half of a 7oz. can)
Two sticks of celery or a tsp. of celery salt
2Tbs. Seasoning Salt. (Paprika,salt,pepper,granulated garlic,Italian seasoning)
1-2cups Chicken stock (optional)
2 cups of tomato sauce mixed with one cup of water
How to cook the ground beef:
Boil meat until cooked. Remove from heat and strain off fat or allow to cool and remove fat from top layer of meat. Return meat to the pot it was boiled in.
While meat is boiling put all of the other ingredients in a food blender or food processor and puree. And mixture to the meat after the fat has been rendered. Heat on medium until it reduces down to your liking. Salt to taste or add spice to make it hotter to your liking.
"This recipe can easily be doubled or tripled and the meat portioned and froze to use as needed for a healthy quick flexible protein," said Baida.
