Vineyard and Winery celebrates new production facility

MEDFORD, Ore.- In the midst of an early harvest, 2Hawk Vineyard and Winery is now crushing grapes in its new on-site production facility.

The building's groundbreaking was back in March. The production facility gives the owners and the winemaker more control of the entire process from before the grape is picked, to when the wine is poured into a glass.

"It was really important to the owners that they were able to maintain that control of quality, that control of the process, from the grape to the glass and this facility is what allows us to be able to do that," said Kiley Evans, 2Hawk's winemaker.

Evans says he anticipates the first batch of white wine and a rose produced on-site should be ready by next spring. Barrel-fermented and aged whites will be ready by fall or winter next year. Then, he anticipates red wines produced on-site to be ready closer to fall and winter 2018.
